How safe is our emails from company network I spy monitoring?

This came up when answering another question on a not related topic. I think people should know how private their email really is in the workplace. How safisticated the technolgy is today.
besides microsoft outlook express and windows via Vista usually used on company computers as in- house email are the alternate sites on hotmail and yahoo safe, or Gmail safe in this workplace computer from the prying eyes of the company administer?
I need more information that received so far and I think the question is broader than I realized. I think it’s a matter of ethics and what a company should be monitoring on one’s own time.

is there any chance of preventing network administrator from monitoring my system remotely?

i dont want my computer to be monitored by the network administrator using any software like Radmin and so…what can i do against this? can i do any settings in my system?

How do you stop someone from monitoring your network traffic?

Are there any other ways to mask your internet activity on a closed network than a proxy? i know programs exist that allow you to spy on other computers on a network and even record there passwords, how do i stop this.
